Chicken Empanadas and fun sites to mess with ur photos
I love these things... and... that's why they're probably not good 4U... we used to buy bags of this stuff from Lisa's relatives... anyway, here's a simple recipe...
Crust: 8 rolled pie crusts (e.g. that w/b 4 boxes of the pb doughboy kind) cookie cutter'd into 4 inch circles (re-squish-n-roll scraps to make an extra circle from each roll)
Filling: 1 tablespoon oil 1 tablespoon butter 1/2 onion, minced 4 cloves garlic, minced 1 lb chicken breast cubed 1 small potato, diced 1 small carrot, diced 1 cup chicken broth 1 cup frozen green peas 1/2 cup raisins 1/4 cup soy sauce Pepper to taste (cayenne is good too)
Spoon about 1.5 teaspoons of Filling into the middle of each pastry circle. Fold the circle so the edges meet and filling is sealed. Press the edges of the pastry with the tines of a fork. Combine lightly beaten egg with 1 tablespoon of water. Brush surface of each folded puff with egg mixture.
Bake: Preheat oven to 400° Arrange on a greased baking sheet. With a knife make 2-3 slits on the surface of each puff. Bake for about 20 minutes (until lightly browned).
or... Fry: You can also fry 'em until they're golden brown on both sides (tastes better but probably not as good for you as bake'n 'em... woof...)
btw, prior to baking or frying, you can freeze 'em in a sealed plastic bag for a couple of mos... and pop a few out here and there for a quick snack when ya have an inkling...
also, also, if you have any left over filling and happen to have some lumpia wrappers available... speaking of lumpia... naw... i'll save that for a future journal entry...
