Ingredients 1 large potato 3 tbs oil 1/2 medium onion, diced 7 cloves garlic, minced 1 lb. Ground Turkey (or hamberger) 1/4 tsp cayenne pepper 1/4 cup soy sauce 2 medium tomatoes, dicedDirections Start by slicing up the potato into quarters (lengthwise) then into 1/4 inch slices Brown potatoes in oil, in a large skillet, on both sides Remove potatoes from pan and place in bowl for later (leave oil in the pan) In same pan w/ remaining oil, saute the onions & garlic Add the ground turkey to the pan (breaking up and browning) Mix in the cayenne pepper and soy sauce Mix in the diced tomatoes Cook on medium heat, stirring occasionally, until most of the liquid evaporates (e.g. all you can see of the tomato is little rolled up pieces of its skin) Turn off heat and add the potatoes back into the mixture Tastes great over rice... and... if you have any leftovers the next day, it makes for a great omelet filling or... just frying it up w/ scrambled eggs for a nice torta...
