Mexican Cornbread Casserole
Ingredients
- 2 pkgs Jiffy corn muffin mix
- 2 Tbs olive oil
- 1 lb. hamburger (or ground turkey)
- 1 cup onion, chopped
- 1 jalapeño pepper, chopped
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 2 eggs, beaten
- 2/3 cup milk
- 1 can cream corn
- 1 can regular corn
- 8oz sour cream
- 8 oz. cheddar cheese, grated
Directions
- Preheat oven to 400°F.
- Grease 9x13 pan.
- Sauté onions & meat in olive oil.
- Add peppers, regular corn and spices.
- In separate bowl, combine eggs, muffin mix, sour cream, milk and cream corn.
- Pour half of batter into dish.
- Spread meat mixture over batter.
- Sprinkle with cheese.
- Spread remaining batter over cheese.
- Bake 45 minutes until lightly browned.
