Mushroom Risotto

INGREDIENTS:

3 tablespoons butter 

5 cloves garlic, minced

1 onion, diced

8 ounces mushrooms sliced 

4.5 cups chicken broth

2 cups arborio rice

1 teaspoon thyme

3 more tablespoons butter 

1/4 cup freshly grated Parmesan (optional)


DIRECTIONS:

Saute 2 tablespoons butter, garlic, onions & mushrooms for 5 mins or so

Stir in chicken broth, rice and thyme 

Cook on manual high pressure for 5 minutes

Quick-release then stir in 2 tablespoons Butter & Parmesan
