Skillet Arroz Con Pollo

 

  • 2 tablespoons olive 🫒 oil

  • 6 chicken 🍗 thighs

  • 1 onion 🧅 chopped

  • 6 cloves garlic 🧄 minced

  • 1 bell pepper 🫑 chopped

  • ¼ teaspoon red pepper 🌶️ flakes

  • 1 teaspoon smoked paprika

  • 1 teaspoon oregano

    1 teaspoon cumin

  • 1 bay leaf 🍃

  • 2 tablespoons tomato 🍅 paste

  • 2 cups long grain rice 🍚 uncooked

  • 1 cup frozen peas 🫛

  • 1 cup frozen corn 🌽

  • 28 oz crushed tomatoes 🍅

  • 2.5 cups chicken 🐓 broth

  • Season chicken with salt and pepper

  • In cast iron skillet brown chicken thighs in olive oil then transfer to plate

  • In same skillet sauté onion, garlic and bell pepper

  • Stir in remaining ingredients and bring to a boil

  • Place chicken back on top (skin side up) and bake at 400°F for 45 minutes
