1 bell pepper π« chopped
¼ teaspoon red pepper πΆ️ flakes
1 teaspoon smoked paprika
1 teaspoon oregano
1 teaspoon cumin
1 bay leaf π
2 tablespoons tomato π paste
2 cups long grain rice π uncooked
1 cup frozen peas π«
1 cup frozen corn π½
28 oz crushed tomatoes π
2.5 cups chicken π broth
Season chicken with salt and pepper
In cast iron skillet brown chicken thighs in olive oil then transfer to plate
In same skillet sautΓ© onion, garlic and bell pepper
Stir in remaining ingredients and bring to a boil
Place chicken back on top (skin side up) and bake at 400°F for 45 minutes
