Chicken Parm Stuffed Peppers

INGREDIENTS

  • 3 cups shredded mozzarella

  • 1/2 cup Parmesan

  • 5 cloves garlic, minced

  • 1.5 cups marinara

  • 1 tbsp. parsley

  • 1/2 tsp pepper flakes

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 12 oz. breaded chicken, cooked & diced

  • 4 bell peppers, halved seeds removed

  • 1/2 cup broth



DIRECTIONS

  • Preheat oven to 350ยบ

  • In a large bowl, combine 2 cups mozzarella, parmesan, garlic, marinara, parsley, red pepper flakes, salt and pepper

  • Fold in chicken

  • Spoon mixture into halved bell peppers and top with remaining 1 cup mozzarella.

  • Pour chicken broth into baking dish (to help the peppers steam) and cover with foil.

  • Bake for 1 hour

  • Uncover and broil for 3 minutes
