Chase’s Turkey Meatballs

Ingredients

  • 1lb ground turkey

  • 1 sweet potato

  • 1/2 cup oatmeal cereal (pulsing regular oats)

  • 1/4 cup unsweetened applesauce

Instructions

  1. Pierce the potato skin with a fork 3 times on one side & 3 times on the other
  2. Microwave for 3 minutes, turn upside down, then microwave for 3 more minutes
  3. Fork should spear into potato easily.  If too firm, microwave in one-minute increments until done
  4. Preheat oven to 350 degrees
  5. Line a baking dish with foil and spray with nonstick cooking spray (or use parchment paper)
  6. Mash the potato then combine all the ingredients together
  7. Form 20 meatballs spaced equally onto the baking dish
  8. Bake for 20 minutes at 350 degrees

Chase also likes regular beef meatballs, steak, chicken, asparagus, cauliflower, broccoli, naan, noodles, french fries, tortillas, and rice balls (can fill with veggies and meat).
