Ground Turkey, Potato, Tomato thing

Ingredients
  • 1 large potato
  • 3 tbs oil
  • 1/2 medium onion, diced
  • 7 cloves garlic, minced
  • 1 lb. Ground Turkey (or hamberger)
  • 1/4 tsp cayenne pepper
  • 1/4 cup soy sauce
  • 2 medium tomatoes, diced

    Directions
  • Start by slicing up the potato into quarters (lengthwise) then into 1/4 inch slices
  • Brown potatoes in oil, in a large skillet, on both sides
  • Remove potatoes from pan and place in bowl for later (leave oil in the pan)
  • In same pan w/ remaining oil, saute the onions & garlic
  • Add the ground turkey to the pan (breaking up and browning)
  • Mix in the cayenne pepper and soy sauce
  • Mix in the diced tomatoes
  • Cook on medium heat, stirring occasionally, until most of the liquid evaporates (e.g. all you can see of the tomato is little rolled up pieces of its skin)
  • Turn off heat and add the potatoes back into the mixture

    Tastes great over rice... and... if you have any leftovers the next day, it makes for a great omelet filling or... just frying it up w/ scrambled eggs for a nice torta...
  • Porkchop (or chicken breast) Rice Casserole

    Ingredients
  • 6 Porkchops (or chicken breasts)
  • 2 cups uncooked rice
  • 1 package dry onion soup (e.g. the kind you mix w/ sour cream to make onion dip)
  • 1 can golden mushroom soup
  • 3 cans water

    Directions
  • Preheat oven to 375º
  • Brown Porkchops (or chicken) in oil
  • Place rice evenly on the bottom of a casserole dish
  • Sprinkle dry onion soup over the rice
  • Place browned porkchops (or chicken) on top of the dry soup (covering rice)
  • Spread undiluted golden mushroom soup over porkchops
  • Gently poor 3 cans water over top
  • Bake uncovered @ 375º for 45 mins
  • Cover casserole and bake for another 15 mins
  • Porcupine Meatballs

    Ingredients
  • 1 Egg beaten
  • 1 Can Condensed Tomato Soup
  • 1/4 cup long grain rice (or calrose or jasmine or basmati but... don't use brown because it doesn't cook well in the meatballs)
  • 1/4 of a medium sized onion finely chopped
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 lb ground turkey (ok... ground beef for the real thing)
  • 1 teaspoon worcestershire or soy sauce

    Directions
  • Combine egg & 1/4 can of tomato soup in a bowl
  • Mix in rice, onion, garlic, salt & pepper
  • Mix in ground turkey/beef
  • Shape mixture into 1.5 inch balls and place in large skillet (that has a lid)
  • Using same bowl (no need to wash), mix remainder of condensed soup, worcestershire (or soy) sauce, and 3/4 can of water
  • Pour soup mixture over meatballs
  • Heat over stovetop to boiling
  • Lower heat, cover & simmer for 40 mins

    tastes great over rice (brown, white, jasmine, basmati, or... even quinoa!)
  • Hawaiian Shortbread Oatmeal Cookies

    Ingredients:
  • 3/4 c. butter flavor Crisco or Extra Virgin Coconut Oil
  • 1 c. brown sugar, firmly packed
  • 1/2 c. granulated sugar
  • 2 tbsp. milk
  • 1/4 c. water
  • 2 tsp. almond extract
  • 1 egg
  • 1 1/2 c. flour
  • 3/4 tsp. baking soda
  • 1 tsp. salt
  • 2 c. Quaker oats, uncooked
  • 1 c. coconut
  • 1 c. macadamia nuts, crushed

    Directions
  • Preheat oven to 350 degrees
  • Cream butter flavor Crisco, brown sugar, granulated sugar, milk, water and almond extract in large bowl, blending until creamy
  • Mix in egg
  • Sift together flour, salt and baking soda and gradually add to creamed mixture, mixing well
  • Mix in oats, nuts and coconut
  • Drop by teaspoonfuls onto lightly greased cookie sheets
  • Bake at 350 degrees for 10-15 minutes (e.g. 10 mins chewier cookies or 15 mins for crunchier)


    Simpler Oatmeal Shortbread Recipe



    Ingredients
  • 1 cup all-purpose flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 ounces unsalted butter, softened
  • 1/2 cup brown sugar
  • 3/4 cup oatmea

    Directions
  • Preheat oven to 350°F.
  • Grease 9x9 baking pan with butter
  • In a medium bowl, mix flour, cornstarch, salt and cinnamon
  • In a large bowl, cream butter and brown sugar until smooth
  • Mix in flour mixture
  • Mix in oatmeal (just enough to distribute evenly)
  • Press dough evenly into prepared pan
  • Bake for 25 mins
  • Remove from oven and immediately cut shortbread into squares

    Basic Scone Recipe and the Star Tours II grand opening



    Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 tablespoons butter
  • 1 egg, beaten
  • 3/4 cup milk (can use buttermilk too)

    Directions
  • Mix the dry ingredients together in a medium bowl
  • Cut in the butter until the mixture resembles course crumbs
  • Stir in beaten egg
  • If you wish, you can add nuts, dried fruit, chocolate chips, cheese, etc. at this point
  • Gradually add milk until a thick dough formed
  • Turn out the mixture onto a floured board and knead lightly
  • Roll out dough to a 3/4" thickness
  • Cut into 2" rounds
  • Place the rounds about 1" apart on a lightly greased baking sheet.
  • Brush the tops with egg or milk
  • Bake at 450° until golden brown (10 to 15 mins)
