Chicken Pot Soup (Instant Pot)

 Ingredients

  • 3 Tbs olive oil

  • 1 cube butter

  • 3 Carrots diced

  • 3 Celery Stalks diced

  • 1 Onion diced

  • 2 lbs Red Potatoes cubed

  • 1/2 cup Green Beans chopped

  • 1 bag frozen corn

  • 5 cloves Garlic minced

  • 1/4 cup flour

  • 1 tsp Salt

  • 1/4 tsp Pepper

  • 1 tsp Sage

  • 1 tsp Thyme

  • 1 can Coconut Milk

  • 3 cups Chicken Broth

Instructions

  • Using saute mode and add oil, butter, carrots, celery, and onion for 2 minutes

  • Stir in potatoes, green beans, corn, garlic

  • Sprinkle 2 Tbs flour and stir everything up

  • Stir in salt, pepper, sage, thyme, coconut milk and chicken broth

  • Cook on soup setting

  • Puree 1/2 of the potatoes then stir back into soup

  • Stir in velveteen chicken
