Ingredients
1 cup finely diced onion
1 pound ground turkey
1 green bell pepper, chopped
1 (29 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 (14 ounce) can chicken broth
1 teaspoon thyme
1 teaspoon sage
2 cups water
1 cup white rice + 1 1/3 cups water
Directions
Sauté onions until softened
Stir in & break up the ground turkey until browned
Stir in the bell pepper, tomatoes, tomato sauce, broth, thyme, sage, 2 cups water and bring to boil
Cover and simmer 30 minutes
Meanwhile, in a small pot bring rice & 1 1/3 cups water to a boil, cover, lower heat and simmer for 10 minutes
Stir cooked rice into soup & heat through
