1 Ib. Italian sausage 🌭
1 Tbsp. olive 🫒 oil
1 onion 🧅 chopped
3 celery ribs chopped
2 carrots 🥕 chopped
5 cloves garlic, 🧄 minced
1 Tbsp Oregano 🌿
1Tbsp Basil 🌿
32 oz broth 🐓
24 oz Tomato 🍅 Sauce
1 bunch kale 🥬 , stems removed
15-oz. can cannellini beans 🫘 , drained
15-oz. can red kidney beans, 🫘 drained
1 cup dried ditalini (mac salad) or other tiny pasta 🍝
1 bunch parsley 🌿 chopped
1 Tbsp. red wine 🍷 vinegar
In large pot, Cook sausage until browned. Transfer to a plate.
Sauté onion, celery, and carrots until tender
Stir in garlic and cook 2 minutes.
Stir in broth, Tomato Sauce, kale and 2 cups water.
Bring to boil, reduce heat, cover and simmer 15 minutes.
Stir in sausage, beans, pasta, oregano and Basil.
Return to boiling, reduce heat, cover and simmer 15 minutes
Remove from heat and stir in parsley and vinegar.
