- 2 lbs ground beef
- 1 large onion chopped
- 1 tsp garlic power (for meat)
- 1/2 tsp salt (for meat)
- 12 8" flour tortillas
- 2 tsp vegitable oil (for meat)
- 16 oz. shredded cheddar (or jack or pepper jack)
- 1/4 cup vegetable oil (for sauce)
- 2 tbs flour
- 1/4 cup chili powder
- 1 16oz tomato sauce
- 1 1/2 cups water
- 1 tsp cumin
- 1 tsp garlic powder (for sauce)
- 1 tsp onion powder
- 1/2 tsp salt (for sauce)
Directions
- Preheat oven to 350
- In saucepan, fry onions & ground beef in 2 tsp vegetable oil, until browned
- Stir in 1 tsp garlic powder and 1/2 tsp salt. then set aside
- In different saucepan, heat 1/4 cup vegetable oil
- Add chili powder and flour, and stir over heat until lightly brown
- Add tomato sauce, water, cumin, garlic powder, onion powder and remaining 1/2 tsp salt, and stir over heat for 10 mins
- Stir 1/2 cup of the sauce into the meat mixture
- Spoon some meat and cheese into center of each tortia, roll them up and arrange in a 9x13 baking dish
- Pour remaining sauce over enchiladas
- Sprinkle top with any remaining meat & cheese
- Bake for 30 mins
