Ingredients
- 1 cup wild rice (uncooked)
- 1/2 cube butter
- 2 tbs olive oil
- 1 large onion, diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbs flour
- 1 large carrot, diced
- 2 celery stalks, diced
- 20 ounces button mushrooms, sliced
- 5 cups chicken broth
- 2 bay leaves
- 1 teaspoon thyme seasoning or 2 teaspoons fresh thyme (sliced)
- 1.5 cups water

Directions
- In a medium-size pot, boil wild rice in chicken broth for 30 minutes
- Meanwhile, heat the butter & olive oil in a large pan
- Add onions, salt and pepper and saute for 7 mins
- Add mushrooms and saute for 5 mins
- Add the carrot and celery and saute for 5 mins
- Sprinkle flour on top of vegitables and stir in
- Add the bay leaves, thyme & sauted vegitables to the soup
- Stir in 1.5 cups water
- Bring to boil, lower heat, cover and simmer for 30 mins
